Vegan Avocado ”Egg” Rolls

These yummy ”egg” rolls are absolutely delicious and vegan. They are prepared in the air fryer, which is a healthier option.



  1. In a medium-sized bowl, start by mashing your avocados.
  2. Then finely chop your sundried tomatoes and onions and add to the avocados.
  3. Juice the lime and sprinkle over your mashed avocado.
  4. Add all your spices to the avocado.
  5. And finely chop your cilantro and add to the avocado. Mix everything until well combined.
  6. Then take one sheet of your vegan egg roll wrapper and put about one tablespoon of avocado filling and place it near one of the corners.
  7. Then roll the corner over your filling, press gently to make it tight and firm.
  8. Then fold in your corners, like an envelope, and keep rolling until you’re near the last corner.
  9. Brush some water on the last corner and close. The water will help seal the eggroll.
  10. Then put the eggrolls in the air fryer, make sure they all have a little bit of space and none of them are touching each other.
  11. Spray with a non-stick spray (I used avocado oil) and heat in the oven at 350 degrees Fahrenheit for 6-8 minutes. Make sure to flip them over halfway.
  12. Serve with vegan sour cream or vegan ranch (optional)
  13. Enjoy!
